Hawaiian Sweet Rolls / Cinnamon Rolls

Ingredients:
2 packets active dry yeast
1/2 c warm water
3 eggs
1 ¼ c pineapple juice
1/4 c water
3/4 c white sugar
1/2 tsp ground ginger
1 tsp vanilla extract
1/2 c butter, melted
6.5 c all-purpose flour

Directions:
1. In small bowl dissolve yeast in 1/2 cup warm water. Let stand until creamy, about 10 minutes.
2. In a large bowl, beat the yeast mixture, eggs, pineapple juice, 1/2 cup water, sugar ginger, vanilla, and melted butter. Gradually stir in flour until a stiff batter is formed. Cover with a damp cloth and let rise in a warm place for 1.5 hour.
3. Punch down the dough. Turn onto a well floured surface. Pinch off enough dough to form a ball about the size of a large golf ball and place in your cast iron skillet or baking pan that has been sprayed with non-stick cooking spray.Cover and let rise again till doubled about 50 minutes.
4. Bake in preheated 350* oven for 20- 25 minutes, or until golden brown. Remove from oven brush with melted butter
*** I didn't have pineapple juice, but did have some crushed pineapple in a can, so I just put a cup of pineapple in the blender and pureed it until it was frothy***


EXTRA RECIPE!!
Cinnamon Rolls

Ingredients:
1/2 c butter (softened)
1 1/2 c brown sugar
1/2 c white sugar
2 Tbl cinnamon{ mixed with white sugar}
1 tsp nutmeg
** nuts and raisins optional**

Directions:
After the 1st rising, I rolled half the dough out into a rectangular shape on a floured board.Put a layer of softened butter on the dough. Spread brown sugar evenly over it.
Next add cinnamon and white sugar over the brown sugar.
Sprinkle the Nutmeg over the cinnamon sugar layer.
Add chopped nuts and raisins if you like.

Starting at the long end of rectangle, start rolling dough until you get to the other side. Pinch seems together with your fingers.
Cut 2-3 inch thick slices and follow above baking instructions.

35 (plus) Natural Fruit Water Recipes


Water is the healthiest beverage possible, and if you’re vowing to drink more of it, you may need to switch it up once in awhile so you don’t get bored. Bonus, by adding healthy fruits and herbs, you’re getting the benefits of those vitamin packed goodies, too.
Some herbs will release more flavor when crushed, though this isn’t necessary. Some days I’ll throw strawberry slices and mint into my water bottle and do nothing special. Other days I’ll crush the mint, squeeze the citrus, etc. It’s up to your personal preference.

My personal favorite combination is: Lemon + Fresh Mint

MMmmmm Soups!

Colder months bring comfort food, and for me hearty soups are a favorite. There is just something about a hot bowl of savory smelling goodness! Mmmm!! 
They are a great make ahead meal, that can be easily frozen for later. They are easy to make, and usually quite budget friendly. Here we have rounded up some really tasty recipes to share with you.





Broccoli Cheese Soup

Ingredients:
1/2 cup butter
1 onion, chopped
1 (16 ounce) package frozen chopped broccoli
4 (14.5 ounce) cans chicken broth
1 (1 pound) loaf processed cheese food, cubed
2 cups milk
1 tablespoon garlic powder
2/3 cup cornstarch
1 cup water

Directions:

In a stockpot, melt butter over medium heat. Cook onion in butter until softened. Stir in broccoli, and cover with chicken broth. Simmer until broccoli is tender, 10 to 15 minutes.
Reduce heat, and stir in cheese cubes until melted. Mix in milk and garlic powder.
In a small bowl, stir cornstarch into water until dissolved. Stir into soup; cook, stirring frequently, until thick.

Roasted Butternut Squash Soup with Apples and Bacon

Ingredients:
1 (3 pound) butternut squash - peeled, seeded, and cubed
1 tablespoon olive oil
8 strips bacon, chopped
1 large onion, chopped
6 stalks celery, chopped
6 carrots, chopped
1 bay leaf
2 teaspoons curry powder
1 teaspoon dried thyme
salt and ground black pepper to taste
1 Granny Smith apple - peeled, cored, and cubed
4 cloves garlic, minced
1 cup apple cider
1 1/2 quarts chicken stock
1/2 teaspoon ground nutmeg(optional)
1 1/2 cups sour cream

Directions:
Preheat an oven to 375 degrees F (190 degrees C).
Place squash in a large bowl and drizzle with olive oil; mix to coat; sprinkle with salt and pepper. Spread squash into a single layer on a baking pan. Roast the squash in the preheated oven, turning once, until fork-tender and caramelized; 30 to 40 minutes.

Place the bacon in a Dutch oven and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Remove the bacon slices to a paper towel-lined plate, reserving the drippings in the pan.

Place the onion, celery, carrot, bay leaf, curry powder, thyme, and salt and pepper in the Dutch oven; cook in reserved bacon drippings until the carrots and celery are soft. Mix in the apples and cooked squash and cook another 5 minutes. Stir the garlic into the mixture and cook another 1 minute. Pour the apple cider over the mixture; reduce heat to medium-low and bring to a simmer; allow to reduce to about half its original volume. Stir in the chicken stock; simmer over medium-low heat for about 20 minutes.

Puree the soup in small batches in a blender, or use an immersion blender. If using a blender, don't fill the blender more than half-way. Always remove the center lid piece of a stand blender when blending hot liquids so the steam can escape. Cover the hole with a dish towel while blending. Stir the nutmeg into the soup. Garnish each bowl with 1 tablespoon of sour cream and some of the bacon pieces to serve.

Hamburg Soup

Ingredients:
1 lb of ground beef (lean)
1 onion (chopped)
1/2 red pepper (chopped)
1/2 yellow pepper (chopped)
3 carrots (sliced)
2 zuchini (sliced)
3 celery sticks (sliced)
2 cups baby spinach (fresh)
1/2 cup brown rice
1 can beef consomme soup (beef broth)
2 cans of water
1 tsp celery salt
1 tsp cumin
pepper to taste

Directions:
Cook and drain ground beef. Slightly sauté onion & peppers. Combine with other ingredients in stock pot and let simmer 1-2 hours.

Note: You can replace fresh spinach for frozen, thaw, but don't drain off excess water, simply add 1/2 cup less of water

Optional other ingredients to throw in: Canned baby corn, canned diced tomatoes, mushrooms, potatoes or pasta (instead of rice), barley and lentils.


Tortilla Soup with Black Beans

Ingredients:
1 tablespoon olive oil
4 garlic cloves, minced
1 teaspoon chili powder
2 cans (14 1/2 ounces each) diced tomatoes in juice
2 cans (15 ounces each) black beans, rinsed and drained
1 can (14 1/2 ounces) reduced-sodium chicken broth
1 package (10 ounces) frozen corn kernels
Coarse salt and ground pepper
1 cup crushed tortilla chips, plus more for serving (optional)
1 tablespoon fresh lime juice, plus lime wedges for serving

Directions:
In a large saucepan, heat oil over medium. Cook garlic and chili powder until fragrant, about 1 minute. Add tomatoes (with juice), beans, broth, corn, and 1 cup water; season with salt and pepper.
Bring soup to a boil; reduce to a simmer. Add tortilla chips; cook until softened, about 2 minutes. Remove from heat; stir in lime juice, and season with salt and pepper. Serve soup with lime wedges and, if desired, more chips.

French Onion Soup

Ingredients:
1/4 cup butter
3 white onions, thinly sliced
1 tablespoon all-purpose flour
2 tsp sugar
1 tbsp balsamic vinegar
2 cups water
2 cups beef broth
1 French baguette
1 cup of shredded mozzarella cheese
A few sprigs of parsley

Directions:
Combine butter, onions and sugar in a sauce pan. Cook over low to medium heat for 15-20 minutes . You must cook them slow for the flavor to be right. You should look for them to be translucent first, and then as they just start to turn golden, that's when they are ready. Next stir in flour and balsamic vinegar until well blended with the onions and pan juices. Add water and beef broth and heat to boiling. Reduce heat to low. Cover soup, and let simmer for 10-15 minutes.

While the soup simmers, cut 1 inch thick slices from the baguette and toast the slices until browned. Place oven safe bowls on cookie sheet, and ladle out the soup into the bowls (leaving enough room for bread on top). Place 1 slice of the toasted baguette on top of the soup in each bowl. Liberally sprinkle cheese over top. To finish, add a small sprig of parsley (stem removed) on top of the cheese. Bake at 425 degrees F for 10 minutes, or just until cheese is melted.


Smoky corn chowder with bacon

Ingredients: 
6  slices bacon, chopped
1  leek (white part only), finely chopped
1 russet potato, finely chopped
2 cups frozen or canned corn kernels
1 1/2 cups chicken broth
1 1/2 cups milk
398 ml can creamed corn
1 sprig of thyme or 1/2 tsp dried thyme
1 bay leaf

Directions: 
Heat a large pot over medium. Add bacon and cook just until crisp, 4 min. Discard all but 1 tbsp of bacon fat. Add leek and sauté until tender, 1 min. Then add potato, corn, broth, milk, creamed corn, thyme and bay leaf. Bring to a boil, then reduce heat to medium-low. Simmer, uncovered, stirring occasionally, until potatoes are tender, 20 min. Remove thyme and bay leaf before serving. Season with fresh pepper. Soup will keep well in refrigerator up to 2 days, or in freezer, in a covered container, up to a month.
Note:
Creamed corn adds richness to this soup without adding a lot of fat.



Sausage, Lentil, and Kale Soup

Ingredients:
2 teaspoons extra-virgin olive oil
8 ounces sweet Italian sausage, casings removed
2 celery stalks (with leafy tops), thinly sliced
1 medium yellow onion, diced medium
1/2 cup dried lentils
6 cups low-sodium chicken broth
1 bunch (about 1/2 pound) kale, preferably Tuscan, stems removed, torn into bite-size pieces
Coarse salt and ground pepper
2 teaspoons red-wine vinegar

Directions:
In a large Dutch oven or heavy pot, heat oil over medium-high. Add sausage and cook, breaking up meat with a wooden spoon, until golden brown, about 5 minutes. Add celery and onion and cook until softened, about 5 minutes. Add lentils, broth, and 1/2 cup water and bring to a boil. Reduce to a rapid simmer, partially cover, and cook until lentils and vegetables are tender, 25 minutes.
Add kale and season with salt. Return soup to a rapid simmer, cover, and cook until kale wilts, about 5 minutes. Remove soup from heat, stir in vinegar, and season with salt and pepper.

Carrot Ginger Soup

Ingredients:
3 cloves of garlic
1 large onion (coarsely chopped)
2 tbsp of butter
6-7 large carrots
2 tsp minced ginger
2 tsp ground cumin
1/2 tsp salt
1/4 tsp ground nutmeg
1/2 cups chicken broth
4 cups water

Directions:
Melt butter in a large saucepan over medium heat, and add garlic and onion.Stir often until soft, (approx 5 min). Meanwhile, grate ginger, peel carrots and slice, then add all to onion mixture. Sprinkle with cumin, salt and nutmeg, stir in water and undiluted chicken broth and bring to a boil. Cover and reduce heat to medium-low. Simmer, stirring often, until vegetables are very tender, (approx 30 minutes).
When finished cooking, use an immersion blender to puree soup. I'm told you can also use a food processor, but then you have to let the soup cool, it's messy, it's more work... Just my opinion. I'd suggest an immersion blender, but hey, it's your choice!!

Pizza Soup

Ingredients:
2 tablespoons olive oil
2 onions, peeled and chopped
4 cloves garlic, minced
1 28 ounce can whole, crushed or chopped tomatoes
2 cups chicken broth
2 carrots, peeled and grated
1 tablespoon dried oregano
8 ounces pepperoni, thinly sliced
a sprinkle or two sea salt and freshly ground pepper
4 slices whole grain bread
2 cups shredded mozzarella cheese

Directions:
Sauté the onions and garlic in a large stockpot with the olive oil until the onions are lightly browned and your kitchen smells amazing.
Add the canned tomatoes. (If you use whole tomatoes crush them with the back of a wooden spoon.) Add the chicken broth, carrots and oregano. Simmer for 15 minutes or so until the carrots are tender.
Add the pepperoni and season with salt and pepper to taste.
Preheat the broiler in your oven.
Ladle the hot soup into 4 onion soup bowls or 4 large ovenproof soup cups. Cut the bread into large circles and cover the top of each soup bowl. Sprinkle on 1/2 cup of shredded mozzarella onto the top of each bread slice and then place bowls under the broiler in your oven. Cook until the cheese is golden and bubbling, about 2 or 3 minutes.


Herbed Chicken And Potato Soup

Ingredients:
1 tablespoon extra virgin olive oil
2 strips bacon, trimmed of visible fat and finely chopped
1 chicken thigh (on the bone, if possible), about 140 g, skinned
2 onions, finely chopped
500 g potatoes, peeled and diced
3 cups reduced-salt chicken stock
leaves from 4 sprigs fresh thyme or 1⁄2 teaspoon dried thyme
pepper to taste
1 1⁄4 cups low-fat milk
chopped parsley, or a mixture of chopped parsley and fresh thyme, to garnish


Directions:
Heat the oil in a large saucepan. Add the bacon, chicken and onions, and cook over low heat for 3 minutes. Increase the heat and cook for a further 5 minutes, stirring the ingredients occasionally and turning the chicken once, until the chicken is pale golden-brown in colour.
Add the potatoes and cook for a further 2 minutes, stirring constantly. Pour in the stock, then add the thyme and pepper. Bring to a boil. Reduce the heat, cover the pan, and leave to simmer for 30 minutes.
Using a slotted spoon, transfer the chicken to a plate. Remove and chop the meat and discard the bone, if necessary. Return the chicken meat to the soup. Stir in the milk and reheat the soup gently without boiling.
Ladle the soup into bowls, garnish with chopped parsley or parsley and thyme and serve.

Thirsty Thursday Spooky Sips

For all your Halloween hosting needs, we've collected the best party perfect drinks to serve to your ghouls and goblins this October 31st!  


Looks spook-licious, right!?  Ok, let's go check out each one and what you need to make these yourself.  Plus, check out some bonus drinks below!


Bloody Punch with Floating Hand

Ingredients:
3 cups cranberry juice
1-1/2 cups apple juice
1-1/2 cups grape juice
2 cups caffeine-free cola
1 cup frozen strawberries

Directions:
In a large pitcher or punch bowl, combine the cranberry juice, apple juice and grape juice. Stir, then refrigerate until you're ready to serve. At the last possible moment, add the cola, the strawberries and, of course, the Floating Hand of Death.
For the Floating Hand of Death: 
In a measuring cup or jar, stir a few drops of green food coloring into some water -- not too much, just enough to give it a slightly decomposed tint.
Pour the greenish water into a disposable rubber glove (the stretchy kind -- make sure it's not powder-coated inside) and tie the top securely. Place in the freezer for several hours or overnight.
At serving time, peel the glove off the hand and deposit icy hand in chilled punch. Yum

Slime Punch

(Note about recipe: Make sure to use a very large bowl or a saucepan with high sides when making this frothy mixture. The meringue powder will really foam up when you start whisking.)

Ingredients:
2 tubes red decorating gel
Lemonade mix to make 2 quarts
1/4 cup sugar
1 tsp. meringue powder
2 liters seltzer
10 drops green food coloring
4 drops yellow food coloring

Directions:
Squeeze red gel down the inside of 12 small, clear glasses. Let dry about 10 minutes.
In an extra-large bowl, combine lemonade mix, sugar, and meringue powder. Slowly pour in seltzer, whisking continually until combined. Stir in green and yellow food coloring. Pour punch into glasses and serve.

Boo-Nilla Shake Recipe

Ingredients:
1 cup whole milk
2 pints vanilla ice cream
1 cup heavy cream
1 tablespoon confectioners' sugar
1/3 cup semisweet chocolate chips

Directions
For the faces: Place chocolate chips in a microwave-safe bowl; microwave on high until melted, 1 to 1 1/2 minutes; stir. Using a small brush, paint chocolate inside glasses (if it hardens too soon, microwave 20 seconds more). Let set a few minutes before adding shake. Prepare glasses up to a day ahead, but don't fill until ready to serve.
For the shakes:
Blend milk and 1 pint ice cream in a blender until smooth. With machine running, add remaining pint ice cream, one scoop at a time; blend until smooth. Pour milkshake into six 8-ounce glasses decorated with chocolate faces, filling them 3/4 full.
Next, put cream in the bowl of an electric mixer fitted with the whisk attachment. Beat on medium speed until soft peaks form. Add confectioners' sugar. Beat until stiff peaks form. Transfer whipped cream to a pastry bag fitted with a 1/2-inch plain round tip. Pipe spiral mounds of whipped cream on top of milkshakes. Serve immediately.


Candy Corn Smoothies

Ingredients:
2 cups coconut sorbet (slightly softened)
6 tablespoons milk
2 cups orange sherbet (slightly softened)
2 cups lemon sorbet (slightly softened)
4 drops yellow food color
Candy corn (if desired)

Directions:
In blender, place coconut sorbet and 2 tablespoons of the milk. Cover; blend on high speed 30 to 60 seconds or until smooth. Divide evenly among 8 glasses. Place glasses in freezer. Rinse blender.
In blender, place orange sherbet and 2 tablespoons milk. Cover; blend on high speed 30 to 60 seconds or until smooth. Pour over coconut mixture in glasses, dividing evenly. Return glasses to freezer. Rinse blender.
In blender, place lemon sorbet, yellow food color and remaining 2 tablespoons milk. Cover; blend on high speed 30 to 60 seconds or until smooth. Pour over orange mixture in glasses, dividing evenly. Garnish with candy corn.
Serve or freeze until serving time.
Swamp Juice

Ingredients:
1/2 cup small tapioca pearls (found in the baking aisle of most grocery stores)
Food coloring
4 tablespoons sugar
8 gummy fish
Seltzer water
Lemonade
8 gummy worms


Directions:

To Make The Eggs: Bring 6 cups of water to a boil and add the tapioca pearls. Reduce the heat slightly and boil the pearls, stirring occasionally, for 20 to 25 minutes.
To color the eggs: Divide the pearls, with the remaining water, between two bowls. Add 4 drops of food coloring (in the picture colors used were, 3 drops of yellow and 1 drop of green in one bowl, and 4 drops of blue in the other) and 2 tablespoons of sugar to each bowl. Stir the mixtures, then allow them to sit uncovered for 20 to 25 minutes. Drain and rinse the pearls with cold water.
To Make The drink: Spoon 2 tablespoons of pearls into each glass and drop in a gummy fish. Fill the glasses with seltzer water, then add a splash of lemonade. Place a gummy worm around a spoon as shown.

Liquefied Ghost Cocktail

Ingredients:
2 oz. vodka 
1 oz. vanilla simple syrup 
1 oz. cream 
2 oz. soda

Directions:
Mix vanilla simple syrup, cream, vodka and soda together in a cocktail shaker, then serve in a chilled martini glass.

Witches' Brew

Ingredients:
2 oz. mixed pineapple and cranberry juice 
2 oz. 7-Up or Sprite
1-1/4 oz. shot Malibu Coconut Rum

Directions:
Mix juices and 7-Up or Sprite in a highball glass. Pour shot of rum down the side of the glass right before drinking.

Random Recipe: Squash-kin Cupcakes

It's fall. It's October!! So it's the time of year when you make, eat & drink pumpkin everything, right!?  So I had it in my head I was going to make some pumpkin muffins.  Well, that's where the idea started, and then grew into something different.  

I've had this package of Betty Crocker white cake mix in my cupboard for what seems like forever.  I had even opened the cupboard once because I thought about making it, but didn't.  So I though, ok, I can make some pumpkin spice cupcakes. It'll be tasty, and easy! The easy part is what sold me! 
I grabbed some cute little cupcake liners from the dollar store and got to it.  I knew I had some pumpkin puree in the freezer from last year, so I had what I needed, and needed to use it up anyway.  Well, that's when it went a little off track.  Turns out the puree was from TWO years ago.  Ooops!! I probably could have used it and it would have been fine, but it smelled a little more like freezer than pumpkin.  I was about to scrap it until I could go out for the canned variety, when I remembered, we had one lonely little squash from our garden this year.  And I do mean little! 
As you can see, not real big.
I had heard once that you could use a butternut squash to make pumpkin pie.  They're very similar in taste, all you needed was the spices (which would be used with the pumpkin anyway). So I peeled and cut up the squash and boiled it up, pureed it, and got back on track.  
The recipe was still easy.  I just followed the directions on the box, but instead of 1 1/4 cup of water, I put all the puree I had, (which was about 3/4 cup), and topped the rest up with water.  Then the 1/3 cup oil, 3 eggs as listed.  The only other deviation was I added about 2 1/2 tsp of pumpkin spice. Cook for 20 minutes at 350 degrees F.

For the frosting, I found a great (and again easy) vanilla frosting recipe at food.com.
2 cups powdered sugar
2 tablespoons butter, softened
2 tablespoons milk
1/2 teaspoon vanilla


Combine ingredients and beat on medium speed until smooth and fluffy.

If you've checked out my other posts, you see where I'm constantly trying to incorporate vegetables into foods for my daughter, since she's a picky little one.  I think I've succeeded once again, because she loved these (even without frosting).
