FUDGE PUDDLES....



Ingredients for the cookie part:
1/2 cup butter or margarine softened
1/2 cup creamy peanut butter
1/2 cup sugar
1/2 cup light brown sugar
1 egg
1 tsp vanilla
1 1/4 cups flour
1/2 cup oatmeal
3/4 tsp baking soda
1/2 tsp salt.

Directions:
Cream butter, peanut butter and sugars until well mixed, add egg and vanilla . Mix flour, oatmeal, salt and baking soda in separate bowl, add to peanut butter mixture. Make 18 small balls and place in muffin tins. Bake @ 325 for 14-16 minutes. Remove from oven and immediately make wells in center.

Ingredients for the fudge part:
2 cups whipping cream,
1 cup sugar,
3 tbsp cocoa,
3 tbsp corn starch,
1 tbsp butter
1 tbsp vanilla..

Directions:
Boil over medium heat until thick. Pour into wells and let cool

Bacon Cheeseburger Loafs



Ingredients:
-Roll of Refrigerator Biscuits. (Grands Homestyle Original)
-1 cup of shredded cheddar/mozzarella blend cheese
-1 cup of browned hamburger
-1/4 cup of Real Bacon Bits
-Pepper and Garlic to taste
-1 Egg White Beaten
-Parmesan Cheese Grated

Directions:
Flatten biscuit roll. Top with pinch of Cheese, tsp hamburger, small pinch of bacon bits and tiny bit more cheese. Next, season with pepper & garlic, then fold your sides up and close it. Shape it like a miniature loaf, and place seam side down in a greased 9 x 13 pan. Brush tops with beaten egg white and sprinkle with parmesan. Bake at 350 for 30 min. or until golden brown.

Blender Muffins


Ingredients: 
2 1/2 cups dry oatmeal
Single serving container of any type or flavor yogurt (I used banana/strawberry)
2 organic eggs
1/2 cup coconut sugar or regular sugar (coconut is best for health)
1 1/2 tsp baking powder
1/2 tsp baking soda
2 ripe bananas

Directions:
Use non-stick spray or grease with coconut oil (do not use paper muffin cups, they will stick to the paper).
Blend all the ingredients in blender on your highest setting until smooth. You may need to blend the oatmeal first if you do not have a high powered blender like a VitaMix and then add the remaining ingredients. If you do not have a high powered blender you will need to stir by hand in between blending to make sure all ingredients are mixed thoroughly. Pour batter into muffin tins dividing equally
Bake in pre-heated 400F oven for 20-25 minutes until toothpick inserted into center of muffin comes out clean.
Remove muffins carefully and let cool. Enjoy! Makes 10 – 12 Yummy muffins. 


Note: You can also add a cup of chocolate or peanut butter chips into the batter (mixed in by hand) the kids would love this!

33 CALORIE CHEESECAKE!


Ingredients:
*3/4 Cup nonfat cottage cheese
*2/3 Cup nonfat plain Yogurt
*1 Tbsp flour
*2 Tbsp sugar
*1/4 tsp salt
*4 egg whites
*Juice from 1/2 lemon
*1/2 Cup assorted fresh berries

Directions:
1. Place all ingredients except eggs and berries in a blender or food processor and whip until batter is smooth
2. Add egg whites and give it a few pulses
3. Gently mix in fruits with a spoon. DO NOT blend
4. Spray bottom of your pan with cooking spray or lightly cover with oil, pour batter in
5. Bake in oven at 350 degrees for about 30 minutes, checking frequently to make sure it does not brown or dry out
6. When done, serve super hot straight out of the oven, or chilled in the fridge. Enjoy!

Spinach Chips






Ingredients:
-2 Cups Spinach leaves (big, healthy looking leaves)
-1 Tablespoon Extra virgin olive oil (as required)
-Italian seasoning blend (to taste)
-Salt (to taste)

Directions:
1. Preheat the oven to 325 degrees F.
2. Line a baking sheet with foil. Set aside.
3. In a bowl, put the spinach leaves and then the olive oil and mix it well without breaking or tearing the leaves.
4. Sprinkle salt and Italian blend and mix well until all leaves are coated.
5. Take the foil lined baking sheet and arrange the leaves in a single layer without any overlaps.
6. Bake in the oven for 8 minutes. Remove from the oven and let it sit on the baking sheet for another 2 minutes.
7. Using a spatula, transfer them into a bowl or plate.
Note:
Do not overcrowd the baking sheet. Every leaf should be equally exposed to the heat.

Macaroni & Cheese Balls



Ingredients:
-A Roll of Grands Biscuits (home style original)
-1 Cup of shredded mozzarella Cheese
-1 Cup of already made mac & cheese
-Pepper to taste
-1 Egg white
-Parmesan cheese

Directions:
Flatten out the biscuits
Top each biscuit with mozzarella cheese with just a pinch.
Scoop just 1 to 2 tbsp of already made mac & cheese onto the mozza. 
Season with pepper.
Now, gather your edges up and fold and pinch to seal it closed.
Place with sealed side down in a 9 x 13 greased pan. (Don't let the edges touch each other)
Brush tops with beaten egg white, and sprinkle with Parmesan cheese.
Bake at 350 for about 30 min, or until golden brown
